About the Book

In 2009, Camas Davis founded the Portland Meat Collective (PMC), a one-of-a-kind traveling butchery school and meat buying resource in Portland, Oregon. Since then, the PMC has offered hundreds of hands-on, whole-animal butchery, slaughter, and meat utilization classes to thousands of people who wish to learn how to source, butcher, cure, and cook local, humanely-raised, sustainable meat. The New York Times Magazine, Martha Stewart Living, Dark Rye, Food & Wine, Cooking Light, Bon Appetit, Sunset and many other national media outlets have written about Camas Davis and the PMC. As a result, hundreds of people across the country have expressed interest in launching a Meat Collective in their community. In 2013, Camas Davis raised money to help three more communities launch their own Meat Collectives.
